Tomatoe Fish & Kale

All of my housemates were gone today so I took the opportunity to take full advantage of our tiny kitchen after my run!

While searching for quick and easy recipes, I found an awesome one for kale & salmon in Men’s Health, of all places. One of my housemates has a subscription so it’s always lying around our dining room table, and it is a FASCINATING read. There are really useful articles on what food you should eat to stay alert throughout the day, tips on breaking bad habits, and stuff like that.

ANYWAYS, by combining this recipe from Not Eating Out in New York and the Men’s Health one, I made this:

For the fish (not salmon, I got the cheapest thing I could find at the Chinese market), I seasoned it with salt, pepper, olive oil, and ginger before covering it and putting it in the fridge. I really liked the recipe from Not Eating Out because it’s incredibly specific and perfect for someone like me who lacks any sort of common sense when it comes to cooking. Then I cooked the fish in a pan and combined it with stewed tomatoes, oregano, and lemon; next time I’ll add basil. The kale was super easy to make as well – I just put it into a pot with olive oil and salt, covered it, and let it cook for a few minutes over medium heat.

I also roasted garlic to spread on the baguette:

So delicious and smushy.

The whole undertaking only took me a mere 30 minutes to complete! Unfortunately cleaning up took another half hour.

After stuffing myself like a Thanksgiving turkey, I was still somehow hungry, so I made a peach lassi.

It consists of a peach, a small container of non-fat plain yogurt, and a pinch of cinnamon. I can foresee myself drinking maybe a hundred of these over the next few weeks. Maybe next time I’ll experiment with a different fruit.
